Romaine salad with walnut
For those lazy days when all you want to do is lie in bed and watch Netflix. Substitute popcorn with a healthy, crunchy salad instead.
Ingredients:

6 large eggs

1 head romaine torn into pieces

1 cup walnut halves toasted

Shallot vinaigrette

Salt
-
Pepper
Instructions:

Put eggs in a medium saucepan and bring to a boil. After 2 minutes, turn off heat, cover and let sit for 6 minutes.

Transfer to ice water bath.

Drizzle lettuce and walnuts with 5 tablespoons vinaigrette and toss.

Peel eggs and serve on top of salad.

Season with salt and pepper.
