Kale and Dill Frittata Muffins

Ingredients:

  • 3 tablespoons chopped fresh dill
  • 2 small kale leaves
  • 1 cup cherry tomatoes
  • 8 eggs
  • 1 clove of garlic
  • 1/3 cup feta cheese
  • 1/3 cup unsweetened almond milk
  • ¼ teaspoon mustard
  • Olive oil
  • Salt
  • Pepper

Instructions:

  1. Preheat the oven to 350F
  2. Brush the muffin pan with oil
  3. Whisk the eggs, milk, garlic, mustard, dill, salt, and pepper
  4. Pour the egg mixture into the muffin cup
  5. Put chopped kale, tomatoes, and feta into each mixture
  6. Bake for 20-22 minutes
  7. Season with salt and pepper
  8. Serve and enjoy
